PRACTICAL ASSESSMENT

Cooking is an interactive hands on class.  I can not imagine trying to play golf by only reading about it.  Nor can I imagine you could learn to cook through book work.  Be here be ready and do.  You will be assessed based on what I see.  These mark sheets will give you an idea of how I am tracking and assessing your growth.

sanitation

Food can safely spend 4 hours in the danger zone after 

preparation (only 2 hours when reheating)

Danger Zone.  It doesn't mean you can't have food in this zone at all, just not too long. F40-F140.
